BOUNTY BALLS

These are ADDICTIVE but perfect for an afternoon snack or a healthy sweet treat after dinner. They are gluten and dairy free too.

Ingredients:

70g desiccated coconut

15g vanilla protein powder

1 tsp vanilla extract

1 tbsp honey

4 squares of good quality dark chocolate

1 tbsp of coconut oil

1 tsp of peanut butter

Pinch of Himalayan salt

Nut milk (I used oat)


Method:

Blend the coconut with the protein powder, honey, vanilla extract and a splash of oat milk in a food processor or blender.

Roll the mixture into golf ball sizes and then place a little bit of pb on top, place them in the freezer.

Melt the coconut oil and chocolate in a pan over a low heat. Sprinkle in the salt.

Dip the balls in the chocolate mixture so that they are fully coated. Repeat for all of them and then put back in the freezer to set.

I keep mine in the freezer but you can store them in the fridge too. ENJOY!
